1st place chili recipe......
This is the winning chili recipe from our first annual chili cook off. Kena Toone was the winner. It is very healthy and yummy! Thanks for sharing Kena. I am working on getting the winning cornbread and desert recipes. I will post them as I get them.
White Chicken Chili
1 T. veg oil
2 med onions- chopped (1 c.)
2 cloves garlic, finely chopped
3 c. chicken broth
2 T. chopped fresh cilantro or 1/2 t. ground coriander
2 T. lime juice
1 t. ground cumin
1/2 t. dried oregano leaves
1/4 t. red pepper sauce
1/4 t. salt
1 can (11oz) white shoe peg or whole kernel corn, drained
1 can (15-16 oz) great northern beans, drained
1 can (15-16 oz) butter beans, drained (I use 2 cans great northern beans because butter beans are just like over-grown Lima beans and no one likes those, now do they...)
2 c. chopped cooked chicken breast
Heat oil in 4 qt. Dutch oven over med heat. Cook onions and garlic, stirring occasionally until onions are tender. (Don't brown garlic.)
Stir in remaining ingredients except chicken. Heat to boiling, reduce heat, and simmer 20 minutes, uncovered. Stir in chicken and simmer until hot.
Serve with sour cream, crushed tortilla chips, tomato, cilantro, cheese, or whatever fixins you like.
